History
The history of Jin Xuan oolong dates back to the Taiwan Tea Research Institute (TTES), which developed the tea in the early 1980s. The name “Jin Xuan” means “Golden Lily” in Chinese, and the tea is officially classified as TTES #12. When breeding the tea plant, researchers aimed to create a variety that was different from traditional Taiwanese teas such as Alishan, Lishan, and Dong Ding. The Jin Xuan tea plant is unique in that it produces high-quality leaves even when grown at higher altitudes, which produce a tea with a distinctive creamy and floral flavor.
How to make it
When brewing Jin Xuan oolong, it is important to ensure the right water quality and temperature to bring out the full flavor of the tea. For best results, follow these steps:
Tea quantity : Use 6-7 grams of tea leaves for a 150-200 ml teapot or cup.
Water quality : Use soft water with low mineral content, as hard water can affect the taste of the tea.
Water temperature : Start with water at 85-90°C, then gradually increase the temperature during subsequent pours.
Steeping time : For the first infusion, let the tea steep for 1 minute. For subsequent infusions, the steeping time can be increased to taste.
Number of infusions : Jin Xuan oolong can withstand multiple infusions, and you can enjoy the changing flavors of the tea up to 5-7 times.
When preparing, it is worth paying attention to personal preferences and adjusting the water temperature, steeping time and amount of tea accordingly. With the right technique, the rich and complex flavors of Jin Xuan oolong will fully unfold, providing an unforgettable tea-drinking experience.

Awakening: Before you start infusing, awaken the tea leaves with a very quick steeping and rinsing.
You can even drink this to warm up your taste buds and body sensations, and focus your attention on the tea.
Fill the tea maker so that the tea leaves are covered with water, then pour the water off them after 1-2 seconds.
We call this process awakening.

Steeping time: Pour room temperature water over the leaves and steep for 3-4 hours. Or, refrigerate for 7-8 hours. Strain your tea and drink within 24 hours.
