Shui Xian – Aged rock oolong (2016)

The 2016 vintage, carefully stored Shui Xian is a blend of rock oolongs from the Wuyi Mountains. shows its clean, mature face. Time transforms the fresh florality into deeper layers: dried fruits, balsamic woods and delicate herbal tones appear, the sip and it becomes smoother, rounder. The classic yan yun – the “rock sound” – is here coolly It is manifested in a camphoraceous finish and a lasting, mineral sweetness.

Origin & maturation

Fujian, Wuyishan. Hand-picked, thick-leaf oolong, with classic wuyi processing. Matured in dry, clean conditions to retain the edges resulting from fresh roasting round out and the balsamic, dried fruit notes come to the fore. (Some batches may require a light post-roasting to maintain the profile freshness.)

Flavor profile

  • Scent: prunes and dates, sandalwood, light cocoa beans, old library wood.
  • Taste: mineral sweetness, caramel breath, compote of dried fruits (plums, longan), delicate herbal-balsamic tones.
  • Body & color: silky, round body; deep amber in the cup.
  • Finish: cool, camphoraceous throat sensation, lingering sweetness ( hui gan ).

Preparation recommendations

Pro tip: a preheated device (gaiwan or small clay pot) and a short “wake-up call” Rinsing helps to open up mature scents.

  1. Asian (gongfu)
    6–7 g / 100 ml, 98–100 °C. Short rinse, then 12–15 sec first pour, then gradually increase (15 → ​​20 → 25 sec…). 7–9 infusions can be held.
  2. Western style
    3–4 g / 300 ml, 95–98 °C, 3:00–3:30 minutes. For a softer cup 2:30 minutes, for a stronger one 4:00 minutes.
  3. "Thermos" / slow extraction
    2–3 g / 250 ml, 85–90 °C water, kept warm for 30–45 minutes. Smooth, dried fruit-woody cup, with minimal bitterness.
