What is Yuzu?

Yuzu is a delicious, super bright and aromatic citrus from Asia (originally from China and introduced to Japan during the Tang Dynasty). Often found in Japanese cuisine, you may have come across yuzu when buying 'ponzu' sauce. Yuzu is also found in jams, vinegars and cocktails.

Smell: A bright, cheerful citrus scent reminiscent of fresh, high mountain pine needles, but with a softness reminiscent of a kind of orange ice cream. Salty, lime notes can also be discovered in addition to the characteristic smell of Japanese green tea.
Taste: Citrusy, slightly salty, fruity taste.

Place of production: Haruno - the famous mountainous area of Shizuoka Prefecture. Yuzu comes from Kawane.
Harvest period: Spring
Tea plant variety: Yabukita
Tea plant cultivation and processing: Sencha is steamed for an average of 30-45 seconds to stop oxidation before being rolled into a classic sencha needle shape. "Medium steaming" is characteristic of mountain teas from Shizuoka Prefecture.
